Toddy Plantation: making a traditional alcoholic drink from coconut juice.

A long time ago and even now, beer is still an expensive drink to many especially the lower income group. Locally brewed RM1.90 for a litter as compared RM15.00 for a beer! Both beverage having almost similar lever of alcohol contents. “tody are prepared daily without addition of ;preservatives or additives. [inflorescence] On the right, a pale yellow colored bunch in its flowering stage. Many poorly informed mistaken “tody” with local moonshine that has bad images and long track record of lead poisoning. The same scene taken from another tree. The purpose this could be a familiar scene to many! Left-A bunch of young coconut nurturing from the flower so see the inflorescence in full bloom. The nectar bearing flowers in full bloom. The bees are the sole beneficiary to these nectar. If there is a use and also a way to harvest these in quantity, then the nectar can be transform into nutritious food. Harvesting is the concept and using this raw material to produce “tody” is process!

The inflorescence upon reaching maturity are prevented  from proceed-blooming! See picture-it is properly bundled up to prevent the brace. The tip is sheared to allow the discharge of nectar formed. This inflorescence is a typical example, with earthen pot on left beside on stand-by to accumulate the discharges. Notice a staff is in position to prop the inflorescence at a near horizontal position away from its 45% natural stance!

Inflorescences in full production will have the pots attached to its end to save the nectar dripping out endlessly. As the collection is on a daily basis, trees planted for the purpose have tree trunks properly prepared for easy and safe ascend. The collected fluid upon fermentation will produce that tempting drink “Tody”

“Tody” is a prevailing drink in the estates, purely for the fact that is near to coconut plantations and located next to Rubber/Palm oil estates. It is cheap drink with the concept originating from Sri Langka. Now there are also numerous “Tody” outlet in the town center! These days, the affluence takes “Tody”with stout as a choice drink!. With patrons relaxing under the coconut trees. The drinks are purchased in pails instead of jars! One Liter RM4.00. Nest! Is the sale of “Tody” legal? Absolutely legal! Malaysia being a religious country frown on the open sales of alcoholic drinks. From the mode of transport, quite clearing substantiate the believe that most patrons are from lower income group! Patron who enjoy the here are from al kind of groups they prefer to have the drinks served in the privacy of their home.
